Easiest way to Meal Prep Mashed Sweet Potato
Sweet potatoes are a nutrient dense source of carbohydrates and fiber that are rich in Vitamin A, C, and B6 as well as minerals such as Maganese and Potassium. On top of that, they are loaded with antioxidants, which help neutralize cancer causing free radicals.
I typically recommend eating sweet potatoes to anyone who wants to consume a high quality carbohydrate while trying to avoid or minimize gluten, especially to athletes!
